Savoring Life, Salt-Free: Beef Stew

By barbecuing the London broil steak first, you'll infuse the meat with a delicious smoky flavor that enhances the overall taste of the stew. Ingredients
  

  • 1 pound cooked London broil steak chopped into bite-sized pieces
  • 1 small onion diced
  • 2 cloves of garlic minced

  • ½ pound small golden potatoes halved
  • 1 can 14.5 ounces no-salt-added diced tomatoes
  • 1 cup low-sodium beef broth
  • 1 bay leaf
  • ½ teaspoon dried thyme
  • ½ teaspoon paprika
  • Freshly ground black pepper to taste
  • 1 serrano pepper finely chopped (adjust the amount according to your preferred level of spiciness)
  • Chopped fresh parsley for garnish (optional)

Instructions
 

  • Preheat your grill to high heat.
  • Season the London broil steak with your favorite salt-free seasoning or marinade. Place the steak on the hot grill and cook for about 4-5 minutes per side, or until it reaches your desired level of doneness. For a rare steak, aim for an internal temperature of around 125°F (52°C).
