There’s something magical about the smoky sweetness of grilled vegetables. Not only do they add a burst of vibrant colors to your plate, but they also pack a punch when it comes to flavor. As someone who’s cut back on sodium for health reasons, finding delicious ways to make food flavorful has become my mission. Enter sweet peppers and red onions, my secret weapon in creating mouthwatering, low-sodium dishes.
I love to grill a medley of sweet peppers along with some red onions. They’re versatile and can be paired with just about anything, from lean steaks to chicken cutlets and even beef patties. The caramelization from the grilling process enhances their natural sweetness, and the slight char adds an extra layer of smoky flavor that I can’t get enough of. Trust me when I say you won’t miss the salt.
While some may argue that the charring is bad, I choose to focus on the bigger picture. My heart health has improved since I cut back on sodium, and I believe enjoying food is as important as making it healthy. A little char on my grilled veggies? That’s a trade-off I’m willing to make.
Recently, I’ve started using my air fryer to get that grilled flavor when it’s too chilly to fire up the grill. I lightly coat the veggies in olive oil using my new spray bottle – it delivers a perfect thin layer. Then into the air fryer they go, emerging with that irresistible smoky-sweet flavor I love.
